Soil: Young alluvial, schist based sandy/silt and sandy loams overlaying schist rock.

Vine age: 19 years

Trellis System: VSP

Canopy Management: shoot thinned, hand leaf plucked and crop thinned.

VINTAGE 2015

Growing Degree Days: 940 GDD.

Growing conditions: Slow to start with a late finish to winter. Excellent diurnal temperature’s (Warm days, cool nights). A cool drawn out finish gave us a long slow ripening and increased flavour intensity.

VINIFICATION

Whole bunch fermentation: 0%

Pre-ferment maceration: 5 days

Yeast: Inoculated – various strains

Fermentation heat: Peaked at 31°C

Punch-downs: Twice daily

Post fermentation maceration: 6 days

Oak treatment: 10 months in 30% new French barriques, medium-plus toast, various coopers, mostly Alliers & Vosges forests.

APPEARANCE

Deep, Bright/Ruby.

STYLE

Displays intense black fruit flavours, complexity, and fine tannins that Bannockburn Pinot Noir is renowned for.

BOUQUET

Sweet spice mingles with dark fruit and an underlying earthiness.

 PALATE

Finely balanced with red and black fruits, spices and a brambly earthiness. Finely textured tannins lead to a persistent and elegant finish.
