VINIFICATION

Yeast: Inoculated – Two types of dessert wine yeast

Fermentation Heat: Cool – less than 15°C

 

APPEARANCE

Golden honey

 

STYLE

Sweet dessert ice-wine style. The grapes are harvested at optimum acidity and flavour. They are then sent to a blast freezer and pressed while frozen. This gives concentrated sugar, acid and enhanced flavour whilst maintaining a natural balance.

 

BOUQUET

White florals, with hints of rose petal and chamomile

 

PALATE

Complex with layers of lychee, apricot, and melon, trailing off to a beautiful lingering spicy finish. A perfect balance between intense richness and balanced acidity.

 

CELLARING

Made to drink as a young wine but will cellar comfortably for 1- 8 years.

 

SERVING TEMPERATURE

Serve lightly chilled
